The holidays are upon us! It is that time of year when the holiday hostess in most of us comes out. We start to planning our “perfect” winter holiday get togethers. There is so much that goes into hosting your own holiday get together. Cooking, gifts, decorating, creating an inviting atmosphere and most importantly cooking. Do you know what type recipes I look for when planning my winter holiday fiestas? Recipes that will impress for less and not take weeks to prepare!

My Semi-Homemade Empanadas Tinga de Pollo (Chicken Tinga Empanadas) are a holiday hit! Featuring the deliciously smoky and spicy Chipotle Peppers from La Morena. It makes me feel better to know that I can run out to my local Tony’s Finer Foods and grab a can from their Hispanic Food Aisle. If you’re lucky like I was you can even snag a deal on La Morena’s Chipotle Peppers.

Part homemade, part store made, these spicy empanadas will have your guests impressed. Everyone will be wondering how you were able to whip up such a delicious dish and still look so FAB! On to the recipe!

Semi-Homemade Empanadas Tinga de Pollo (Chicken Tinga Empanadas)

1 oz can of La Morena Chipotle Peppers in Adobo sauce

3 Boneless, skinless chicken breast boiled then shredded

1 15 oz can of Stewed Tomatoes

1 cup of low sodium chicken broth (use the broth from the chicken breast you boiled)

1 small onion sliced very thin

3 Packages of thawed small store-bought Empanada Shells

1 TBSP of your preferred cooking oil

4 TBSP of Melted Butter

Salt to Taste

*Note* You can use whatever parts of the chicken you like. I choose boneless, skinless chicken breast because they are a healthier option and tend to absorb the smoky flavor form the chipotles better.

Combine an entire can of La Morena Chipotle Chiles, stewed tomatoes and the chicken broth in a blender. You want the sauce to have a slightly smooth consistency. If there are small pieces of the pepper in the sauce that is fine. Set aside your chipotle sauce mixture.

In a 3 quart sauce pan add your cooking oil and thinly sliced onions. Cook until slightly translucent. Add in your shredded chicken breast and fry for a minute.

Add in your chipotle sauce mixture, stirring it into the chicken and onions. You are going to want to let the Tinga simmer for at least five minutes or until most of the sauce has been absorbed into the chicken. Set your mixture aside and let it chill to room temperature before going on to the next step.

Preheat your oven to 425 degrees.

Place your empanada shells on a cutting board that is lightly dusted with flour. Place a tablespoon of your Tinga in the middle of the shell and fold the shell up like a taco (or half moon). Do not be tempted to over fill your empanadas! Pinch the edges of the shell shut and then run a fork along the edges to seal your empanada. Place on an un-greased baking, brushing butter on the top of your empanadas.

Place in the oven. Check on them at 6-8 minutes. You will need to flip them so the top of your empanadas brown. When the bottoms start to brown slightly that is when you will want to flip them. Brush your empanadas with more butter and let them finish cooking for another 6-8 minutes.

This recipe makes roughly 36 appetizer sized empanadas. I serve them warm with crema (Mexican “sour cream”) and guacamole to cut down the heat some. You do not have to use the entire can of La Morena Chipotle Peppers. You can adjust the heat to your preference. If you have left over Tinga de Pollo you can save it for lunch as it’s delicious on a tostada topped with crema!
